TASTY THURSDAY

THE CAJUN CHEF
Spicy Bean and Sausage Gumbo Recipe

Ingredients
1 tablespoon olive oil
1/2 cup minced onions
2 cups diced spicy sausage
2 cups beef broth or bouillon
1 (15 ounce)can chili beans , with sauce
3 cups cooked rice
fresh parsley

Directions
1. In a large sauce pan on medium heat, sauté onion in olive oil until translucent.
2. Add sausage and lightly brown.
3. Stir in broth, beans, rice, cumin, and cilantro.
4. Reduce heat and simmer for 30 minutes.
5. Place in a bowl and sprinkle with parsley.
