HOT PEPPER JELLY

My Grandmother gave this recipe to me many years ago. Over the years I have made some variations. I have shared it over and over as it seems to be such an enjoyment to all who try it. Enjoy.

3/4 cup hot peppers of your choice (Careful on this one)
1/4 cup bell peppers
6 cups sugar
2 tablespoons food coloring (I use red)
1 1/2 cups of Apple Cider Vinegar
1 level teaspoon of salt
1 box of CERTO. (once it came in bottle, now in box. use both packages in the box. Do not try to use anything else to set. I have tried and it failed miserably)

Mix peppers, sugar, vinegar, food coloring and salt. Bring to a full boil for 8 minutes. Remove from heat and let stand for 10 minutes. Then add the Certo and let stand another 10 minutes. (This last 10 minutes is approx. due to fact sometimes the Certo starts to set faster, Thus you have to start putting in jars. ) Strain the dregs from the other and put in jar by itself. Good on toast, meats, etc. Recipe makes about 6-7 small jars.

For holidays take some of the jelly and mix with some softened cream cheese. Looks nice and makes and excellent dip for crackers.
